6 eggs, boiled, peeled, chopped
3 spring/green onions, chopped
½ sleeve crackers, crumbled
¼ cup mayonnaise
Fold ingredients together in a bowl, chill overnight. Serve chilled.

When egg salad is mentioned, most people conjure in their mind the yellow spreadable sandwich filling. That is fine, but this is different. While you could technically put bread around this, and eat it as a sandwich, this egg salad is sturdy enough to stand on its own as a side dish. The crackers that are crumbled and mixed into the salad provide the carby, binding duties in place of the bread anyway.
Mom started making this dish years ago. It compliments all kinds of entrees, from fried chicken, to pork chops to salisbury steak. It makes regular occurrences at cookouts, celebrations, funerals, and family dinners.
This recipe is also quite scalable, and can be modified to serve a couple, a small get together, or a large gathering. This is one of those dishes that Mom has learned to make into a larger batch. We all enjoy it, and we all want to be able to take some leftovers home (if there are any).
Having only four ingredients, this is a very easy dish to prepare, and is a relatively inexpensive option as well. Mom says that this was even more true when the recipe emerged. People were growing their own gardens more often, and raising their own chickens, so they already had eggs and onions. That is already half of the items they needed.
I do recommend preparing it the day before you plan to serve it. The dish gets better as the crackers soften and absorb some of the moisture and flavors.
Even if you are not the biggest fan of eggs, and even if you don’t like to have eggs for breakfast, I encourage you to give this egg salad a try. My father-in-law is not usually an enjoyer of eggs, but he really enjoys this dish, (to his own surprise).
I don’t really have a funny story to include here. However, I didn’t want to let that stop me from sharing a recipe with you that I really think you will enjoy.
